Anzac Day Cookie Dough Balls with Coconut Oil

This is a different totally raw and sugar free take on the traditional Anzac bikkie.
Ingredients
- 1 cup of gluten-free rolled oats
- 1 cup of shredded coconut
- 1/4 cup of quinoa flakes
- 2 handfuls of crushed walnuts
- 1/4 cup coconut nectar
- 1/4 cup coconut butter
- 1/4 cup of coconut essence organic coconut oil
- 5 dates pitted
- 1 tsp vanilla powder
- pinch of sea salt
- 1/4 cup of coconut flour
Instructions
- In a food processor add all ingredients and pulse until combined. Keep pulsing until mixture comes together and will hold when squeezed between your fingers. If it is too dry add a touch more coconut oil or if it is too wet add a little coconut flour (but beware coconut flour absorbs a lot of moisture so use sparingly).
- Once it holds well roll teaspoon sized balls and pop in the fridge to set (1 hour works nicely). Enjoy after a dawn service or with your family and friends on Anzac Day. #LestWeForget
